When people tell me they like eggplant it is because they have done something to it - eggplant parmesan, fried eggplant, etc. - no one really likes eggplant. And for the eggplant recipe. I'm with you, Anne: not a huge fan of eggplant. But our farm had a bumper crop this year (read: 8+ weeks of eggplant), and I slowly got over my aversion.
